Healthy Holiday Eats and Sweets Carnival:

A peek into Lu's little kitchen, which gets played with daily.

Today I am participating in an online recipe 'carnival', something I rarely do, but being as I made the best sweet potatoes I've ever had last night, I thought it was fitting! We rarely eat sweet potatoes unless they are pureed into something like a sweet bread, but my mom had me taste test hers, and I knew I had to have more. There is practically no work involved in these either, and we at them as our main course, along with a side salad.

Need:
4 medium sweet potatoes
aluminum foil
Cinnamon
butter

Preheat oven to 350 degrees F. Cut off the ends of each sweet potato and wrap in aluminum foil. Place evenly on oven rack. Bake for 1 hour-75 minutes. When you can feel they are "squishy" they are done! Serves 4.

These are done so well you could just eat them plain, without any condiments on them, but if you think they need a bit of tweaking, add some butter and cinnamon (just a pinch of cinnamon!). You can eat just like a baked potato, OR you can peel the insides out (they literally fall away from the skin) and put in a bowl for mashed sweet potatoes. If you do it this way, I do recommend putting in a bit (1 tbsp for 4) of butter and some cinnamon. (2 tsp), Enjoy! They are so healthy and tasty they don't even need any help of their own.

I looooooove sweet potatoes! We just tried roasting them last night and they turned out delicious - probably my favorite way to eat them now! We cut them into cubes and threw them in with our chicken while it roasted for 40 min at 375. They turned out crunchy on the outside and soft inside. Kylee's Yum-O Potatoes! ;)

We've Gone and Done It

We are in the midst of packing up, and moving. Not just any move, but The Move we've been trying to accomplish for years now. We're heading up to (Washington) Canada. In the last couple of months Stefan had been talking to a potential employer up in Richmond, British Columbia , and after a very swift interview process they offered him the job. Small and large details aside, he accepted and plans to start on February 25th. We leave one week earlier, on the 18th. That's literally just over 2 weeks from when you will read this.
